Every time Spring rolls around, I crave salads. I know… salads are kind of a weird thing to crave, and had you told me ten years ago that I’d love them I wouldn’t have believed you. I think the problem was that I wasn’t make the right kinds of salads. They just seemed so darn bland.
That’s why the salads I make these days have a whole lot of everything- whether I’m mixing raw and cooked veggies or adding some fruit to the mix, I try to get creative and have a different flavor in each bite. For a while, I only used avocado to dress my salads. As yummy as that is, sometimes you just need a little more flavor, you know? And I still haven’t met a dressing at the grocery store whose type of oil or sugar content I approve of, so I decided to get creative.
So this recipe still incorporates my beloved avocado (aka one of my fave healthy fats ever), basil and cilantro for extra greens and nutrients, tahini (that’s just fancy for sesame seed butter), apple cider vinegar (because who doesn’t need more of that in their diets?!), and a couple other goodies.
It’s also:
- oil-free
- sugar-free
- vegan
- and super delicious
And it’s creamy enough to be used as a dip for baked veggies (or chips, crackers, I mean anything really)!
- 1 small or half a large avocado
- 1 small or half a large avocado
- 1 cup basil leaves
- 1 cup basil leaves
- ½ tsp minced garlic (or 1 clove garlic)
- ½ tsp minced garlic (or 1 clove garlic)
- 2 Tbsp cilantro
- 2 Tbsp cilantro
- 1 Tbsp raw tahini
- 1 Tbsp raw tahini
- ½ tsp salt
- ½ tsp salt

- Juice of ½ a small lemon (~1-1.5 Tbsp)

- 2 Tbsp apple cider vinegar
- 2 Tbsp apple cider vinegar
- ¼ cup water, separated, depending on desired consistency (can substitute half with olive oil if not avoiding oil)
- Add avocado, basil leaves, minced garlic, cilantro, tahini, salt, pepper, lemon juice, and apple cider vinegar to a blender or processor.
- Slowly add in water until you reach desired consistency.
- Add more salt and pepper to taste or lemon juice for tang.
