I’ve been vegetarian for over a year now and I get asked all the time if I miss any foods that I used to eat like meat.. nope! Eggs? Nope. But one thing I did miss about eating out after turning vegetarian was French toast because it was always made with eggs. That is until I found this cute little vegan and organic restaurant about 3 hours north of me in Mendocino called Raven’s Restaurant. And guess what they had – vegan, organic French toast! Honestly, before my husband took me there 4 years ago, I didn’t know vegan French toast could taste that good.
I was determined to recreate it. After many a failed attempts, I finally made the easiest and tastiest vegan French toast that I’m going to share with you today!
If this is one of your first times making vegan French toast, I want you to think about a few things before diving in so that you don’t make the same mistakes that I did.
- Sandwich bread can work (that’s what I used when I took these pictures), but thicker breads like sourdough, challah, ciabatta, or baguettes hold together WAY better.
- I use ground flax seed in the batter, but if you don’t have any on hand, ground chia seeds will work too. I find the taste of the ground flax seeds to blend right in better, but both are good options!
- It’s super important to use that 15 or so minutes to allow the mixture to settle before starting to make your French toast.
- Skillets, griddles, ranges, and stove tops tend to work differently. I’ve realized that you have to check to see when the bottom of your bread is turning into more of a golden-brown color before you flip. The times I’ve written on the recipe are what have worked for me.
- If you’re having more than one piece of bread, the second one will always cook more quickly and may burn if you don’t lower the temperature a bit- but again this depends on if you’re using a gas (faster) or electric (slower) stove.
- If you like your French toast sweeter before adding toppings, be sure to add extra maple syrup to the batter (I use 100% organic Coombs Maple Syrup).
Now French toast isn’t something I eat on a daily basis, but it’s a perfect little healthyish treat! And it’s even better when you top it with all the goods! I used strawberries, blueberries, and a banana for an antioxidant and fiber boost, ceylon cinnamon for its anti-inflammatory properties, pecans for energy and brain function, and hemp seedsfor protein.
Here’s exactly what you’ll need to make this super easy vegan French toast:
Ingredients:
-2 slices of bread
-½ cup almond milk
-1 tbsp ground flax seed
-1 tsp vanilla extract
-½ to 1 tsp ground cinnamon
-2 tsp Maple syrup
Method:
- Add the almond milk, flax seed, vanilla extract, ground cinnamon, and maple syrup in a bowl and mix together.
- Leave on counter or in fridge for ~15 mins
- Add coconut oil to griddle or skillet
- Dip bread into mixture for about 10 seconds on each side (around 20 seconds if you’re using sturdier bread like sourdough)
- Place on heated griddle/skillet for about 2 minutes on each side (closer to 5 minutes if you’re using thicker bread)
Then all that’s left to do is decide on your toppings and enjoy!
